Low Cal Italian Eggplant

Introduction

Quick, easy and so good. Quick, easy and so good.
Number of Servings: 2

Ingredients

    11 oz eggplant, sliced 1/2" thick
    1/4 C eggbeaters
    6 T flavored bread crumbs
    1/2 C marinara sauce
    2 oz low fat fresh mozzarella cheese, cut into thin slices

Directions

Dip eggplant slices in eggbeaters, then bread crumbs. Place on a cookie sheet and spray with Pam. Bake at 425 degrees for 15 min then turn over and spray other side with Pam. Bake another 10 min or until soft. Remove slices and place in a baking pn. Top with marinara sauce, then the cheese. Return to oven until melted. Enjoy!
