Introduction

Ingredients

    2.5 cups Cole Slaw, Fresh Express (3 color)
    2 Tbsp Red Onion, finely chopped
    1/4 cup light Greek Yogurt, Plain
    1/4 cup Light Sour Cream
    1 Tbsp White Balsamic Vinegar
    2 tsp dried Cilantro, dried

    13 oz Cod fillets
    2 Tbsp McCormick's Beer Batter Mix, dry
    1.5 Tbsp walnut oil

    6 Tortillas, Snack Size (Taco Loco)

Directions

Place vinegar & cilantro in a bowl. Stir & allow to sit for about 10 minutes. Add in yogurt, light sour cream, chopped red onion, & cole slaw. Mix well, cover, & refrigerate.

Cut fillets in 2x1 inch strips. Salt & pepper each side. Dredge in the dry batter mix & set aside. In a nonstick fry pan, heat 3 tsp oil over medium heat. In 2 batches fry cod until it flakes easily with a fork. Place cooked cod on a sheet pan in a warmed oven. Wipe out fry pan with a paper towel & warm tortillas over medium low heat, remove to a towel covered warm plate.

For one tortilla, add a portion of fish & top with prepared slaw.

Enjoy.

Serving Size: Makes 6 tacos.
