Nutrilicious Chicken Soup

Ingredients

    6 oz. boneless, skinless chicken breast
    3 cans lower sodium chicken broth
    1 cup cooked brown rice
    1 can low sodium black beans, rinsed and drained
    1 cup frozen mixed vegetables
    1/2 cup chopped celery
    2 Tbsp. olive oil
    1 tsp. rosemary garlic seasoning

Tips

To make this a meal, rather than a starter, add more chicken. It will change the nutritional value of course. Or serve with peanut butter and celery. Add a Greek yogurt for dessert.


Directions

Cut chicken into small cubes and brown in olive oil. Add broth, seasoning, celery, and mixed vegetables. Cook until veggies are tender and broth is boiling. Add rice and beans. Heat thoroughly. Serve hot.
