Introduction

Number of Servings: 4

Ingredients

    2 Tbs olive oil
    1-1/2 cups chopped onion
    1 cup thinly sliced red or green pepper
    1 clove garlic, minced (or to taste)
    2-1/2 cups chopped tomato (or canned, no salt added)
    1 tsp ground cumin
    1 tsp paprika
    1 pinch allspice
    1/2 cup canned green chilies
    1 hot chili pepper seeded and finely chopped (optional)
    4 Large whole eggs



Tips

Serve with a whole grain pita. I got hooked on this at a local Turkish restaurant, and this is as close as I could come with some experimentation.


Directions

Heat oil in a skillet over medium heat.
Add onion, bell peppers and garlic stirring while cooking until onion has softened (about 5-6 min).
Add tomatoes, spices and chilies, stir well and continue to cook until the juices have evaporated (about 10-15 min). Reduce heat to low.
Make 4 wells in the mixture and crack an egg into each. Cover the skillet and let the eggs cook to desired firmness (about 5 min)

Serving Size: Makes 4 servings
