My Breakfast Pasta

Introduction

I like to eat my heaviest meal of the day at breakfast instead of dinner. This will definitely give you plenty of energy to last you straight into lunch time. This is also great for a lazy weekend breakfast. I like to eat my heaviest meal of the day at breakfast instead of dinner. This will definitely give you plenty of energy to last you straight into lunch time. This is also great for a lazy weekend breakfast.
Number of Servings: 1

Ingredients

    *1 egg
    * 2 small mushrooms
    * 1 cup/large handful of spinach
    * Tomato
    * Basil, 2 tbsp
    * Onions, raw, 1 tbsp chopped (I use spring onions)
    * Mozzarella Cheese, part skim milk, 1 oz
    * Butter, unsalted, 1 tbsp
    * Spaghetti no 5, cooked without added salt, 1 cup

Tips

I like to add jalapenos and garlic to give it a kick and salt and cracked pepper to taste


Directions

Boil up your pasta water but do not add oil or salt to the water, once you have a rolling boil, add your pasta and begin prepping your main ingredients.

*while your heating up your non stick fry pan, chop up your tomato, onion, mushrooms and basil.
*Add a pat of butter & when the butter is slightly sizzling, toss in your mushrooms and onions and just toss til they are slightly tender.....then add in your spinach and when the spinach has just begun to wilt, toss in the basil and tomato. Push it all to one side and toss in the egg and let is set just about 10 seconds, scramble and then scramble everything together.
Take off the heat once the egg is cooked through.

Put your pasta in a bowl &Top with the ingredients and sprinkle Mozzarella cheese on top.
