1/2 cup Earth BalanceŽ Natural Buttery Spread (soy free)
1/2 cup plus 2 Tbs. Organic Coconut Sugar
1 large Banana, mashed (optional)
3 Egg Whites, or equivalent
1 Tbs. Vanilla Extract
1 scoop Raw Vegan Vanilla Protein Powder
1/2 cup Gluten Free Baking Mix (I used homemade)
3 Tbs. Coconut Flour
1 tsp. Xanthan Gum
1 Tbs. Ground Cinnamon
1 tsp. Baking Soda
1/2 tsp. Salt
3 cups Gluten Free Rolled Oats (not instant)
1/4 cup Organic Raisins
For a crispier cookie, omit banana. No further changes need to be made. If you are using a prepared gluten free baking mix, you may omit the baking soda and/or xanthan gum if they are in your flour blend.

Cream together buttery spread, coconut sugar and mashed banana (if using) until well blended (it will look almost curdled). Add eggs and vanilla, beat well.
Stir together protein powder, baking mix, coconut flour, xanthan gum, cinnamon, baking soda and salt. Stir into wet ingredients. Add oats and raisins, and mix well.
Drop by 1/2 tablespoon sized scoops onto baking sheets, about 2-inches apart. Bake 5 to 7 minutes.
Cool 1 to 2 minutes, then transfer to a cooling rack.
