Makes a thick, richly flavoured soup, which takes very little time to prepare.I generally allow five hours of very slow simmering before serving to enable the flavour of the soup to develop fully. Ingredients

    Water- 8 cups
    Italian soup mix - mangia bene - 250g
    Black Beans - 60 gram
    Beef stock cubes - 4
    Dried Chilli Flakes - 1 teaspoon
    Dehydrated Parsley Flakes -30 gram
    Onions, frozen, chopped - 250 gram
    Frozen Mixed Vegetables (Broccoli, Cauliflower and Carrots 3/4 cup)- 650 gram
    Frozen corn kernels - 1 cup
    Tomato Paste, 2.66 tbsp
    Minced Garlic - 1 tab
    Green tomato pickle - !tab

Tips

Soup should be cooked and beans tender after 120 minutes, but the longer you allow it to cook, the better the flavour.


Directions

- Add ingredients in order listed to large, heavy based pot.
- Stir until well combined, then bring to boil.
- Cover and allow to simmer slowly on lowest heat, stirring occasionally to prevent sticking.
