Vegtable stir fry

Introduction

Number of Servings: 1

Ingredients

    1/2 yellow squash - sliced
    1/2 green zuchinni - sliced
    1/2 onion - chopped
    1/4 red pepper - sliced
    1/4 green pepper - sliced
    4 - 6 mushrooms - sliced
    1 can water chestnuts - sliced
    1/2 sweet potato - sliced thin
    1/4 cup chopped walnuts
    1/4 cup dried cranberrys
    1 tablespoon brown sugar artifical sweetner
    2 tablespoons olive oil
    salt - to taste
    pepper - to taste
    seasoned salt or Mrs. Dash - to taste
    1 teaspoon galric or garlic salt


    optional: chopped chicken peices
    devined and peeled shrimp
    small pieces chopped beef

    You can also add any left over vegtables that you have in the refrigerator to get the frig cleaned up!


Tips

Stir fry slowly and mix remember to stir while all vegtables are cooking. Fast and so easy. You will LOVE it! This makes an entire meal!


Directions

Warm olive oil in wok or large frying pan. Add sliced sweet ptotatoes first as they need extra time to cook throughly. Add all other vertables. When almost done, (15 min.) add brown sugar, dried cranberrys and walnuts. Toss together until well mixed and covered with surgar glaze.
Optional: If adding meat or shrimp, add this at the beginnng of the stir fry with the sweet potatoes.
