Introduction

Vegan kind of mac n ‘cheez’ Simple, kid friendly and plentiful. Vegan kind of mac n ‘cheez’ Simple, kid friendly and plentiful.
Number of Servings: 6

Ingredients

    1 cup unroasted sunflower seed kernels, soaked
    t Tbl olive oil
    1/2 cup thinly sliced carrots
    1 small onion, diced
    3 cloves garlic minced
    1/2 t salt

    3 cups vegetable broth
    2 TBL cornstarch
    1/4 cup nutritional yeast (I used 3/4 cup)
    2 TBL tomato paste (I used whole small can)
    1 TBL lemon juice
    sweet paprika for sprinkling

Directions


Soak seeds 2 hours or overnight in cold water.

boil pot of salted water for pasta & cook as per box instructions.

preheat sauce pot over medium heat and saute carrots & onions till softened. Add garlic and saute 30 seconds.

Combine all in blender, blend till creamy, pour over cooked pasta.

Serving Size: Makes about 6 one cup servings including pasta.
