Introduction

Number of Servings: 4

Ingredients

    2 pounds catfish filets
    4 ounces butter
    4 ounces dry white wine
    1 tablespoon lemon juice
    1 tsp chopped garlic
    3/4 tsp paprika
    1/2 tsp dried thyme (optional)
    1/2 tsp dried oregano (optional)
    1/2 tsp dried basil (optional)
    1/2 tsp black pepper
    salt to taste

Directions

Season fish with salt and pepper. Place fish in casserole dish. Combine seasoning. Melt butter, add wine and remaining seasoning (except paprika). Simmer for 2 minutes, remove from heat and pour over catfish. Sprinkle with paprika. Bake in 375 degree oven for 20 minutes or until fish is done. Be careful not to overcook (fish will continue to cook if left in the casserole dish after you take it out of the oven.
