Healthy Banana Oatmeal Cookies

Introduction

Ingredients

    3 Very ripe bananas
    2 cups oats
    1/2 cup slivered almonds
    1/2 cup chopped dates
    1 Tbs oil
    1tsp vanilla extract
    1tsp cinnamon or to taste

Tips

Can use your favorite chopped nut or dried fruit in place of almonds and dates. Add protein powder to make these into energy bites for hikes or marathons.

Directions

Puree ripe bananas, the riper the better, with the oil, vanilla and cinnamon. In a bowl toss together oats, almonds and dates. Stir in puree until well mixed. Drop by teaspoonful on greased baking sheet, can be packed close together, and bake at 350 degrees for 8 to 10 minutes.
