Quinoa with spinach, onion and tofu

Introduction

A tasty side or main dish. You can cook the Quinoa ahead of time and store in the fridge until needed (It will keep in the fridge for several days). Quinoa cooks great in a rice cooker. Number of Servings: 6

Ingredients

    2 cups of cooked Quinoa
    1/2 package of chopped frozen spinach (thawed)
    1 onion chopped or slivered
    1 T. shelled, slightly salted and roasted pumpkin seeds
    1/3 block of extra firm sprouted tofu, cubed
    2 t. of Mrs Dash's Garlic and Herb or Onion and Herb seasoning blend
    2 T. olive oil (for cooking)
    1 T. Balsamic Vinegar (for seasoning before serving)




Directions

Cook 1/2 c. of Quinoa in 1 cup of water(bring water to a boil and add the Quinoa. Stir, reduce heat and cover. Cook until all the water is absorbed)and set aside
Thaw 1/2 package of chopped spinach
Chop or sliver 1 Onion
Pour 2 t. olive oil in a large frying pan and heat on Medium heat.
When the oil is hot, add the onion and cook until transluscent.
Add the cubed tofu and cook until it slightly browns.
Add the pumpkin seeds and cook for about 1 minute before adding the chopped spinach and the Mrs Dash seasonong.
Cook until all ingediants are hot and serve mixed with 1 T. of basamic vinegar.



Serving Size: Makes approx. 6 1/2-cup servings.
