Roman Chicken

Ingredients

    8 Oz skinless chicken breast cutlets
    1 pkg frozen artichoke hearts
    .5 cup thinly sliced sundried tomatoes (packaged dry)
    2 cups Kitchen Basics chicken stock
    4 oz dry whole wheat penne pasta
    2 oz romano cheese grated
    1 small onion
    2 large cloves garlic minced
    1 tsp fresh chopped rosemary
    2 tsp fresh chopped thyme

Directions

Liberally season chicken with salt and pepper and brown in a non stick skilled sprayed with Pam.

remove chicken when cooked. Saute onions, garlic, artichoke hearts and sundried tomatoes until soft. Add Chicken Stock and herbs. Thicken by adding cheese and simmering to reduce. cook pasta to desired texture and toss with sauce. Plate pasta and top with chicken.
