chewy coconut granola bars

Submitted by: BLUETONEW

Introduction

These came out a little too gooey, and the coconut oil has a slightly weird, but not bad, aftertaste.
After eating these up, I'm going to try using less fat and subbing butter or vegetable oil for half of it (Maybe 2T coconut oil 2T butter).
Or just more dry ingredients in general - more puffed grains (maybe wheat and/or kamut).

    1/4 c. coconut flakes, unsweetened
    4 T. flaxseeds, ground

Tips

some recipes say to bake, i was afraid to crisp them up too much and it's fine raw.

Directions

heat wet ingredients together and whisk until smooth.
stir dry ingredients, then add wet and stir until combined.
press firmly into a parchment-lined baking dish.
chill at least an hour, then cut into bars.

Serving Size: makes 24 bars
