Coconut Cashew Curry Sauce

Introduction

This is a deliciously rich sauce to top veggies and rice with chicken or fish. This is a deliciously rich sauce to top veggies and rice with chicken or fish.

Ingredients

    1 can light coconut milk
    1/2 cup cashew butter
    1 tbsp curry powder
    1 tbsp tomato paste
    3 gloves garlic
    1 tsp mashed ginger root
    1 tbsp olive oil

Tips

This recipe is JUST for the curry sauce!


Directions

Heat oil in a saucepan and add garlic & ginger (and a little bit of salt & pepper to taste).

Add coconut milk, tomato paste, curry and cashew butter and stir to combine, simmering over low heat until thickened.

Use to top any of your favorite veggies, rice and chicken or fish.
