Ingredients

3 cups finely shredded crisp green cabbage
1/4 cup minced onion
1 small carrot, shredded
1/3 cup mayonnaise
1 Tbsp. vinegar
2 tsp. sugar
1/2 tsp. salt
1/2 tsp. celery seed
Directions
Put cabbage, onion and carrot in a bowl.
Prepare the dressing with the remaining ingredients and stir well to dissolve the sugar. Pour over cabbage and toss lightly. Serves 6

I've always made mine w/light mayo & fat free sour cream.
It makes it very creamy and fewer calories. I also add 1/4 cup of both red & green peppers for added crunch & extra
veggies for those who WOULD NOT normaly eat them.
Give it a try. It's always a big hit at all the gatherings when I bring - 9/2/09

You say the coleslaw got spoiled by the next day. Hmmmm? Did you leave it out of the fridge? I've made this for over 30 years and it's never let me down. We eat it for several days with no problem. . .wonder what could have happened!! Z

I make this using light miracle whip 2 or 3 tablespoons and apple cider or rice vinegar whichever I have handy ,start with 1 tablespoon vinegar then add more as i mix and taste to get the tang that we desire . Use 2 teaspoons of sugar no matter how much vinegar i use and husband loves this . - 7/1/09

I haved used a very similar recipe for years. My mom made it and passed it on to me. If you don't like the taste of day old slaw (it can get a little juicy), or if you are making it for just one, mix up the dressing and apply it to fresh grated ingredients each time. I add black pepper also. - 8/29/12

Sounds similar to what I have made. I use the rice vingar in mine and like that of others I use the artifical sweetners and sometimes add the peppers etc...just whatever I have...also if I put in a creamy base it's the light mirclewhip that I use. I like the idea of pineapple and think I will try. - 6/30/11

I used a bag of "Rainbow Salad" mix by MANN'S it has hearts of broccoli, cauliflower hearts, carrots, & red cabbage. It saves a lot of time. I used red onion, red wine vinegar (2 TBSP), light mayo, sugar, and salt. I used a hand held blender to mix all and spread it over the rainblow salad. - 5/1/11
