Mini Spinach Quiches

Ingredients

15 Large eggs
1 pkg frozen spinach
1 cup Fat free/low fat cheddar cheese
1 green pepper, chopped**
1 red pepper, chopped
8 Tble Old Dutch Mild Salsa
(Feel free to add any vegetables you like. I like the salsa, but it doesn't need it.)
Directions
Preheat oven to 350. Use aluminum muffin cups in muffin pan. Spray the muffin cups with non-stick spray.
Defrost the spinach by putting it in the microwave for approx. 3 minutes. Drain. Scramble the eggs in a large bowl. Add spinach, cheese, and vegetables and mix well. Put approximately 1/4 cup of egg mix in each muffin cup. Bake for 25 - 30 minutes. Makes 24 muffin cups. Serving size = 2 mini quiches. Freeze or refrigerate to reheat later!
