Wholesome Banana Bread

Introduction

Ingredients

    1 3/4 c. old fashioned oats(ground into flour) - see note
    3/4 tsp baking powder
    1 tsp baking soda
    1/2 c. unsweetened almond milk(or milk of choice)
    3 small bananas, well ripened
    1 tsp vanilla extract
    sweetener of choice(stevia, splenda, trivia)
    Cinnamon and nutmeg(optional)
    Chia Seeds or Flax Seeds (optional)

    *Note - you can also use 1 c. oat flour and 3/4 c. spelt flour for a more traditional bread texture.

Directions

Preheat oven to 350 degrees.

In a small bowl, combine the spelt flour, oat flour, baking powder, baking soda, cinnamon, nutmeg, and chia seeds. Stir to combine.

In a medium bowl add bananas, coconut milk, vanilla extract, and sweetener if using. Use a whisk to mash the bananas and combine all the ingredients well.

Pour the dry ingredients into the wet. Stir just until combined and there are no dry pockets of flour.

Pour into a loaf pan sprayed with nonstick spray. Bake at 350 for about 25-30 minutes, or until a toothpick comes out clean. Allow to cool on a wire rack for 10 minutes, then remove from the pan and cool completely.
