Easy Vegan Red Beans & Rice

Introduction

Number of Servings: 3

Ingredients

    1 15 oz Can Diced Tomato
    3 cups cooked Brown rice
    1 15 oz can Beans, Kidney beans dark red
    3 cup Yellow Sweet Corn, Frozen,
    10 oz Rotel diced Tomatoes, with green chilies
    1 tbsp Chili powder
    2 tsp Oregano, ground
    .5 tsp Garlic Minced, or one clove minced

Tips

You can serve the tomato and bean mixture on a bed of brown rice instead of mixing together.


Directions

combine all ingredients, except for cooked brown rice, in large soup pot and cook on medium to medium high heat until mixture reaches a boil, stir frequently and lower heat to medium low or medium for 3 more minutes. Then add cooked brown rice and serve.
