Clean Carrot Soup

Introduction

This is a great, neutral soup that can go lots of different ways depending on last minute additions/spices/garnish This is a great, neutral soup that can go lots of different ways depending on last minute additions/spices/garnish
Number of Servings: 5

Ingredients

    2 TB coconut oil
    4 cups chopped carrots
    4 scallions, chopped
    1 cup cauliflower
    5 cups chicken stock
    1 more TB coconut oil

Directions

Melt 2 TB coconut oil in a soup pot. Add carrots, scallions, and cauliflower, cook until tender (4 - 5 minutes). Transfer to blender. Add 1/2 of the chicken stock. Blend until smooth. Return mixture to saucepan. Add remaining chicken stock and coconut oil. Heat and serve.

Serving Size: makes five 2-cup servings
