Introduction

Ingredients

    Cucumber (with peel), 1 cucumber (8-1/4") (remove)
    Onions, raw, .5 medium (2-1/2" dia) (remove)
    Yellow Peppers (bell peppers), .5 pepper, large (3-3/4" long, 3" dia) (remove)
    Olive Oil, 2 tbsp (remove)
    Cider Vinegar, 3 tbsp (remove)
    Oregano, ground, .5 tsp (remove)
    Feta Cheese, 3 oz (remove)
    Red Ripe Tomatoes, 1 large whole (3" dia) (remove)

Tips

You can reduce oil to 1 T and cut cheese back to 2 ounces for less fat.


Directions

Slice cumcumber, onion and pepper. Cut tomatoe into narrow wedges. Add vegetables to a large bowl. Toss with vinegar, oil, cheese and oregano. Season with salt and pepper to taste.
