Chipotle Chicken Pizza

Introduction

Number of Servings: 8

Ingredients

    Salsa:
    1 can rotel diced tomatoes & chiles
    1/2 cup diced onions
    1 cup (4 tbsp) cilantro
    1/4 cup diced red peppers
    **Only use HALF the salsa when mixing with the adobo sauce**

    Pizza:
    Betty Crocker Pizza Crust (mix)
    1 can embasa chipotle peppers in adobo sauce
    3 ounces chicken breast
    1/2 cup black beans (drained & rinsed)
    1/4 cup frozen corn
    3/4 cup sargento reduced fat mex cheese
    1/4 cup diced onions
    1/8 cup cilantro

Tips

You might want to flour the pizza dough so it doesn't stick to the pan.

**Calories don't include half the salsa (about 10 calories)**


Directions

Salsa:
Dice onions, red peppers and cilantro. Add to blender and add can of rotel diced tomatoes & chiles.

Pizza:
Blend separately the chipotle peppers in adobo sauce so they are not chunky.

Blend salsa with chipotle peppers for the sauce of the pizza.

Make pizza dough and spread onto the pizza pan. Spread sauce onto pizza. Top with cooked chicken (season to liking, maybe cumin/chili powder/onion powder). Top with beans, corn, 1/4 cup onions and 1/8 cup cilantro. Finally, top with Sargento Mex Cheese.

Bake for 10-15 minutes (depending on type of oven) at 400 degrees.

Serving Size: 8 slices (medium pizza)
