This can be made simply by whisking in a bowl, or shaking in a jar, but the method using a food processor gives this dressing a beautiful, creamy look and texture. Ingredients

1/4 c. vinegar
2 tbsp. raspberry jam
1 tbsp. scallions, finely minced
1 clove garlic
salt and pepper
1/2 c. grapeseed oil
Directions
Makes 12 1-tablespoon servings
smash garlic clove, and rub on inside of food processor bowl with salt. Finely mince 1/4-1/2 of the clove and place in the food processor.
Add vinegar, jam, scallions, and salt and pepper.
A little bit of minced fresh tarragon, thyme, or even mint would also be nice, I think.
Blend in food processor. With the blade still running, add oil in a very slow, steady stream. If you add the oil too quickly, it will not bind with the other ingredients, and the dressing will tend to separate on sitting... but even if this happens, just shake or whisk it immediately before adding to a salad, and it will still taste great!
