3/4 cup. Sugar
1/2 cup light whipping Cream
3 cups cooked Rice
1 cup 1%. Milk
1/2 cup Raisins
1/8 tsp. Cloves
1/2 tsp. Cinnamon
Lighten this up by using all low fat milk instead of part cream, and reducing the sugar.
Cooking the raisins with milk and rice before adding egg mixture results in them being softer.
Add fiber by using brown rice instead of white. (You may want to add more spices to ramp up the flavor.)
Prep time is using cooked rice. Cooking dry rice will add about 1/2 hour to prep time.
Whisk eggs until frothy. Add sugar and cream. Whisk together until smooth.
Stir egg mixture into rice, stir over medium heat until mixture is cooked and thickened.
Serving Size: Makes 8 1/2-cup servings.
