Tarragon chicken with spring greeens from Food & Wine

Number of Servings: 6

Ingredients

    1 tbsp. butter
    1tbsp olive oil
    6 thighs skinned and de boned
    4 oz arugula cut into ribbons
    4 oz romaine cut into ribbons
    4 oz water cress thicker stems removed
    1/2 large leek or 1 med. cut into slices
    3 tbsp. tarragon finely chopped
    1 tsp caraway seeds
    6oz white wine
    .5 cup chicken broth
    4 oz crème fraiche
    salt and pepper to taste

Directions

heat oil and butter, brown chicken all over, remove chicken and pour out most of the fat.
Add the cut up greens and spices and sautee until wilted, (2 min)add the wine and cook until reduced by 50%
stir in broth and crème fraiche, add chicken and cook on low for 30 minutes. serve with steamed rice, noodles or other grains.

Serving Size: serves 6 at 1 thigh each
