Ingredients

    lean stew beef
    onion
    arrowroot
    pepper
    paprika
    nutmeg
    cloves
    tomato puree
    water
    potato

Tips

trim meat of visible fat. can also be cooked in large pot, by heating tomato, water and spices while cooking meat in microwave safe pan. then adding to liquid. add potatoes 1/2 hr before serving. this method only cooks for about 2 hours, but you must stir occasionally so meat doesn't stick


Directions

cut beef into bite size chucks. chop onion. add arrowroot and half spices to a bag. shake to mix. put meat in and shake to coat. put meat into crock pot and mix in onion. cover with wax paper and microwave insert for 5 minutes. stir and cook another 2 minutes. place insert back in base and add tomato puree, 1 1/2 can water and rest of spices. cook on high 8 hrs. add potatoes and lower heat to low. cook 1/2 hr. serve over pasta, quinoa or rice

Serving Size: makes 10 1 cup servings
