Introduction

These Oat Bars are a fabulous Vegan snack for when you need energy while hiking or working hard in the yard. I like to add a bit more cinnamon. These Oat Bars are a fabulous Vegan snack for when you need energy while hiking or working hard in the yard. I like to add a bit more cinnamon.
Number of Servings: 6

Ingredients

    2 cups large oat flakes
    1/3 cup ground hazelnuts
    1/3 cup ground almonds
    1 tsp cinnamon

    1/2 cup coconut oil
    1/3 cup pure maple syrup
    1 tsp pure vanilla extract

Tips

I like to put wax paper over top and then set another heavy dish on top to keep it pressed down to help it mold better.
You can add chopped dates or other dried fruits to it as well.

Directions

In a bowl mix the dry ingredients.

In a small pot melt the coconut oil, pure maple syrup and pure vanilla extract.

Pour the wet ingredients into the bowl of oats and nuts. Blend and transfer into a low glass square dish. Press down with your spatula and cover with plastic wrap or wax paper. Place in the fridge to set.


Serving Size: Makes 6 2 inch squares
