Wellness Pancake

Ingredients

    1 1/2 cups flour (wholewheat or a combination of white and whole-wheat)
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    two egg whites
    1/2 cup skim milk
    1/2 cup low-fat yogurt
    1 tablespoon vegetable oil

Directions

Just put everything into a bowl and stir; don’t overmix. Thin the batter with a little more milk, if necessary. You can substitute 1 cup buttermilk for the skim milk and yogurt (buttermilk, like yogurt, adds flavor and helps the pancakes rise). Use a nonstick pan or griddle, coated with a small amount of oil, if you like. Let it heat sufficiently—a drop of water should sizzle and instantly evaporate on the pan. Quickly pour about three or four tablespoons
of batter for each pancake, then lower the heat slightly. Turn the cakes when small air bubbles break on the top. One serving (about three pancakes) made from the above recipe provides only about 245 calories and 275 milligrams of sodium. With a whole-grain flour, you get 7 grams of fiber—a good amount—while with white flour you get just 1 gram.
