Lentil and barley stuffed peppers

Introduction

A twist on the usual stuffed peppers. This was my first time making this without meat, so any suggestions on how to perfect this recipe would be appreciated! A twist on the usual stuffed peppers. This was my first time making this without meat, so any suggestions on how to perfect this recipe would be appreciated!
Number of Servings: 4

Ingredients

    4 bell peppers
    2 cups cooked lentils
    1 cup cooked barley
    2 cups chicken broth (to cook the barley)
    1 10 oz can Rotel Tomato & Green Chilies, Diced
    Shredded low fat mozzarella cheese, 1/4 cup
    Seasoning to taste (I used curry powder in the lentils)

Directions

1. Cook lentils in water as directed on package
2. Cook barley in chicken broth as directed.
3. Clean and core out peppers
4. Mix together the lentils, barley, and diced tomatoes, evenly split the mixture and fill the peppers. You may have extra filling, if so, place it in the dish between the peppers
5. Place 1 tablespoon of mozzarella cheese on each pepper

Bake in a covered dish for 15-20 minutes, until peppers cooked to desired tenderness.
