Mushroom Chicken

Introduction

Tender chicken in a mushroom gravy. Great with brown rice, quinoa or mashed potatoes. Tender chicken in a mushroom gravy. Great with brown rice, quinoa or mashed potatoes.
Number of Servings: 4

Ingredients

    1 lb boneless skinless chicken breasts , sliced into strips (or diced)
    4 cups thinly sliced white mushrooms
    3/4 cup chopped green onion (or scallions)
    1.5 cups low sodium chicken broth (dilute with water if condensed)
    3 tablespoons soya sauce
    3 tablespoons cornstarch
    salt and pepper

Directions

Using a non-stick pan over medium heat, cook the chicken and mushrooms in the soya sauce until done (juices in the chicken run clear). If it starts to dry out add some of the chicken broth as required.

Add green onion and remaining chicken broth and bring to a boil.

Mix cornstarch with enough water to make a thin paste and use as required to thicken the gravy.

Add salt and pepper to taste..
