Introduction

This is a quick way to put dinner on the table. With the fresh vegetables, and the mixture of gourmet beans make this a hearty, delicious, warm meal on chilly evening. This is a quick way to put dinner on the table. With the fresh vegetables, and the mixture of gourmet beans make this a hearty, delicious, warm meal on chilly evening.
Number of Servings: 4

Ingredients

    1 can of Campbell's French Onion Soup, undiluted
    2 cups of Swanson's Organic Vegetable Broth
    1 large can of diced or crushed tomatoes, with basil seasoning
    1/2 cup of sliced baby carrots
    1/2 cup of finely sliced scallions
    1 cup of sliced celery

    1/4 cup of dry Gourmet Bean Blend (Costco) or other dried beans

Directions

Presoak the dried beans for at least 4 hours (overnight works best)
Add liquids to soup pot and bring to boil. Add beans and all vegetables. Boil another 5 minutes, then reduce heat to medium and allow to cook another 30 minutes.
