Hot Italian Sausage-Johnsonville 1 link 3oz, 9 oz
Ground beef, lean, 12 oz
Large red onions, about 1 cup, chopped
Large red Pepper, about 1 cup, chopped
Canned Tomatoes, 4 cup
Beans, red kidney, 2 cup
Beans, black, 1 cup
Cumin seed, 1 tbsp
Coriander seed, 1 tbsp
Chili powder, 1 tbsp
Paprika, 1 tbsp
Garlic, 1 tsp
Jalapeno Peppers, 2 pepper
Olive Oil, 2 tbsp
salt and pepper to taste
cheddar cheese, chopped cilantro, and or low fat sour cream.
I am usually an inpatient cook. Slower is better with chili, so feel free to let it simmer or sit on low. The chili also tends to taste better the second day, so if for guests, I recommend preparing the day before, or in the morning, and allow the flavors to mix.
If you are in a rush. you can usually do the prep for each step while the step before is cooking. For instance, I put the oil in the pan and set on to heat while I chop the onion, and the onion to start cooking while I chop the bell peppers, add the peppers then chop the jalapenos, etc... If you do it in the right order, you can do the prep and clean-up at the same time as the cooking and have everything done in 2 hours.

Saute the onion, bell pepper, and jalapeno peppers in the olive oil. about 5 minutes.
Add the garlic and beef and allow to brown with the vegetables. about 5 minutes.
Put the sausage in a non-stick pan and allow to brown, about 10 min, rotating to cook evenly on all sides. When the sausage is cooked, slice it in to bite size pieces and add it to the stock pot.
Add all the spices (except salt and pepper) and stir, allowing the spices to cook for about 5 min.
Add the canned tomatoes to the pot and stir. cook 20 min.
Drain and rinse the beans, then add to the pot and allow to cook about 20 min.
after a total cook time of about 2 hours, should be ready. Salt and pepper to taste.
