Healthy Pumpkin Spice Cake - 3 ingredients only

Introduction

Low fat, low calorie, vegetarian, easy, fast, yummy cake - guilt free! Use no ingredients other than pumpkin puree (not pumpkin pie mix), water, and half a package of cake mix. Ingredients

    1/2 cup water
    1/2 can pureed pumpkin
    1/2 box Duncan Hines Moist Deluxe Spice Cake Mix

Directions

1.Heat oven to 350 degrees. Line an 8" cake pan with tin foil and coat lightly with Pam cooking spray. Set aside.
2.Measure out half the package of cake mix and place in a mixing bowl. Set the remaining cake mix aside for use another day.
3.Add 1/2 cup of water and 1/2 cup canned pumpkin (not pumpkin pie mix) to the mixing bowl and mix with electric mixer on low until moistened. Scrape sides of bowl.
4.Increase speed to medium and blend for an additional minute.
5.Spread batter in prepared pan and bake in preheated oven for 25 minutes. Toothpick test works.
6.Remove from oven and allow to cool in pan for 15 minutes, then transfer to a wire rack - tin foil and all.
7.Once the top is cold to the touch, invert onto a plate and remove the foil.
8.Once completely cooled, frost if you wish or just enjoy as is.

Serving Size: Makes one 8" round cake
