Coconut Pineapple Cranberry Sunrise (Non-Alcoholic Tropical Drink) (8-oz Glass)

Introduction

Trying to approximate a delicious drink I had at Anthony's on Mother's Day 2013. The drink was served in a 16-oz glass with lots of ice and a straw so I think there was actually only 8 oz. of drink, but that's just a guess. Ingredients

    3 oz pineapple juice
    3 oz cranberry juice
    1 oz coconut cream
    1 tbsp grenadine (or to taste)
    Ice (6-8 cubes)

Tips

This is a high-calorie drink, no two ways about it. But you might be able to make something similar with fewer calories. I don't think there's such a think as low-calorie pineapple juice, but you could use sugar-free cranberry juice and cut the coconut cream in half to reduce the calories and still have something yummy.


Directions

Mix pineapple juice and cranberry juice in a shaker or blender. Pour coconut cream on the bottom of a 16-oz glass, then add the juice on top. Fill to the top of glass with ice, then drizzle grenadine at the surface for the "sunrise" effect. It's pretty and refreshing!

Serving Size: Makes 1 8-oz Mocktail
