Thrown Together Quiche Cups

Number of Servings: 24

Ingredients

    1 Small Carton (2 C) Egg Beaters
    3 Lrg Eggs
    2 C Kale, processed
    3/4 C Peppers, all colors, chopped
    1 Small about 1/2 c Onion, chopped
    8-10 Slices Turkey Bacon, chopped
    1 Spear Broccoli, chopped, processed
    3 C Spinach, chopped
    2 C Mushroom, chopped
    1/2 Med Zucchini, about 1/2 c, chopped
    2 C Shredded Cheese

Tips

Use low fat cheese will make this a bit lower in fats. Adding any combination of veggies to taste will work. And any spices you wish. I opted for no spices on this recipe.


Directions

In fry pan add onions, mushrooms and bacon, heat until onion tender. Put in large bowl. Add chopped spinach to pan and cook until wilted. Add to bowl. Slightly run kale, broccoli, and zucchini in food processer add to bowl and add remaining ingredients. Scoop into 24 muffin tins sprayed with Cooking Spray. Bake on 400 for about 20 - 25 min or until knife inserted comes out clean.

Serving Size: makes 24 muffin cups
