Moms' Mexican Soup

Introduction

The other night at my favorite restaurant I enjoyed a fabulous soup. I decided to recreate it at home but doing it Clean! The other night at my favorite restaurant I enjoyed a fabulous soup. I decided to recreate it at home but doing it Clean!
Number of Servings: 6

Ingredients

    Chicken Breast - 8 oz
    Broth from the chicken (strained)
    1 qt. of stewed tomatoes
    1 cup of Celery
    Large Onion
    1 large green pepper
    garlic clove
    1 cup brown rice
    1 avocado
    House Seasoning

Directions

First clean and de-rib / and take the skin off of the chicken breast. We are going to cook these in a stock pot so we can use the wonderful broth in the soup. Add a pinch of Kosher salt and Pepper to the chicken while it cooks. This many take an hour. Make sure the chicken is white when cut open.
Strain the broth and put it back into the stock pot. Break a part the chicken breast into shredded pieces. Next we are going to add the veggies, the canned tomato, and about 3 tablespoons of house season. ( ingredients at the bottom).
Bring this to a boil for roughly 20-40 minutes stirring occasionally . Add a cup of rice and let boil for an additional 20 minutes.
Once you serve the soup add slices of avocado to the hot soup. YUMMO and clean!

I use Paula Deens House seasoning which is basically salt, pepper and garlic power.
