    *Wheat flour, white, bread, enriched, 2 1/2 cup
    Baking Powder, 2 tsp
    Baking Soda, 1/2 tsp

    Egg, 1 large
    Buttermilk, lowfat, 1 2/3 cup
    Butter, unsalted, melted, 1/4 cup
    Vanilla Extract, 2 tsp
    Sweetzfree, 1/4 tsp
    Chocolate chips, mini, sugar-free, 1/2 cup


If steaming, place directly into the steaming chamber (not the rice bowl), and put a couple of layers of paper on top of the chamber under the lid.


Preheat the oven to 375, and/or or prepare steamer. Prepare mini-muffin cups, silicone or paper-lined metal. Beat the egg, then beat in the buttermilk, butter and Sweetzfree. In a large bowl mix the flour, baking powder and baking soda. Gently combine wet ingredients with dry, then gently stir in chocolate chips. Spoon into mini-muffin cups with a 1" cookie-dough scoop, filling each cup. Bake 30min (for silicone cups, perhaps less for metal) or steam 15 min. Test with toothpick. Allow to cool before removing from muffin cups.

Serving Size: Makes 36 mini-muffins
