Introduction

Number of Servings: 6

Ingredients

    About 20 whole grain salted crackers pulsed in a food processor until fine (about 1/2 cup)
    2 1/2 cups corn flake cereal pulsed in food processor until fine
    2 Tbsp sesame seeds
    3/4 tsp cayenne pepper
    1/2 tsp garlic powder
    1 cup nonfat plain Greek yogurt
    1 Tbsp Dijon mustard
    1/2 tsp salt
    Olive oil or canola cooking spray
    4 chicken breast skinless boneless, rinsed & patted dry
    4 chicken thighs boneless skinless , rinsed & patted dry
    ( about 3 1/2 lbs of chicken)

Directions

Preheat oven @ 375
Spray baking sheet with oil
Combine crackers,corn cereal crumbs,sesame seed,cayenne, and garlic powder in shallow bowl
In a large bowl combine yogurt,mustard & salt
Add chicken & coat thoroughly with yogurt mixture
Dip coated chicken in crumb mixture, packing crumbs onto chicken
Arrange chicken on baking sheet & spray lightly with oil
Bake 45-50 min or until juices run clear
