Wholemeal Banana Oat Mini-muffins

Introduction

This is for lactating mothers as there is brewer's yeast added to the ingredients. This is for lactating mothers as there is brewer's yeast added to the ingredients.

Ingredients

    1 cup ATTA Wholemeal Premium Flour
    1 cup Coles Organic Traditional Rolled Oats
    1/3 cup CSR Logicane Low GI Cane Sugar
    3 Tbsp Nutrivital Brewer's Yeast
    1 tsp Baking Soda
    1 tsp Baking Powder
    1 tsp Kirkland Ground Saigon Cinnamon
    1 med Egg, fresh, whole, raw
    1 cup Banana, fresh, mashed
    1 tsp Vanilla Extract
    1 can or 120 grams Heinz 100% Fruit Delicious Apples (baby food)

Directions

Before you start, line mini muffin pan with paper liners

1. In a bowl, combine flour, baking powder, baking soda and cinnamon, brewer's yeast
2. In another bowl (larger), combine egg, applesauce, mashed banana, vanilla and cane sugar. Stir well.
3. Add flour mixture to the larger bowl. Stir enough to get a moist consistency. Add oats.
4. Pour into lined mini-muffin pans.
5. Bake for 10-12 minutes.

Serving Size: Makes 24 mini-muffins at 62.1 cal each
