Jajangmyeon - Korean Black Bean Dish

Ingredients

    Roasted Black Bean Paste, 2 oz
    Potato, raw, 1 cup, diced
    Zucchini, 1 cup, chopped
    Onions, raw, 1/2 of a medium onion
    Pork Shoulder, 1 and 1/2 cups
    Garlic, 1 tsp, minced
    Ginger, 1 tsp, minced
    Cornstarch, 1/2 tsp mixed with water

Directions

In a saucepan over medium to high heat, cook pork until brown.

Remove pork then add vegetables and stir making sure all of the ingredients are coated. Add the minced garlic and stir combining all ingredients. Add 1 cup of water and cook for 10 minutes, or until potatoes can be pierced.

Add roasted black bean sauce and a touch of sesame oil. Thoroughly mix all ingredients, then add pork back.

Add the cornstarch mixture so that the sauce is nice and thick, cook for another 5-7 minutes and serve.

Serving Size: makes 2-3 servings
