Bush's Black Beans & Rice

Introduction

An easy weeknight meal packed with vitamins, fiber and flavor. An easy weeknight meal packed with vitamins, fiber and flavor.
Number of Servings: 4

Ingredients

    1 Tbsp olive oil
    3/4 c. onion, chopped fine
    1/2 c. green pepper, chopped fine
    1 c. diced tomatoes (I use canned, drained)
    1 can (15 oz.) black beans, drain and reserve juice
    1/2 tsp thyme
    1 tsp garlic salt
    3 Tbsp cider vinegar
    1/2 tsp Tabasco
    Rice

Directions

In large skillet over medium heat, warm olive oil. Cook onion and green pepper until crisp tender. Stir in tomatoes, beans, thyme, and garlic salt. Cook 3 minutes; add vinegar, Tabasco and reserved juice from beans. Cook for 5 minutes.


Serve over rice. Garnish with a lime wedge.


Makes about 4 (3/4 c.) servings
