Pam's Ratatouille

Introduction

Number of Servings: 8

Ingredients

    1/4 cup olive oil
    2 onions diced
    2 garlic cloves-minced
    2 medium eggplants, diced
    3 Zucchini sliced
    2 bell peppers sliced
    3 cups chopped tomatoes
    1 tsp basil
    1 tsp salt
    1/4 tsp thyme
    1 bay leaf
    1 tsp rosemary
    dash of all spice
    2 tbsp chopped parsely
    16 tbls shredded parmesan cheese

Directions

Preheat oven to 350
Heat oil in a heavy sauce pan or wok
Add the vegetables and seasonings. Stir and blend well
Place in a oblong pan and cover with foil
Bake for 40-45 minutes
Sprinkle with parmesan cheese. I figure about 2 tbls per plate.
You can serve this hot or cold.
