Introduction

This is a delicious and easy recipe for a dinner favorite that packs a lot of protein. This is a modified version of a recipe I found on the American Diabetes Association website. Ingredients

    - 2 packages (40 oz) Fresh Lean Ground Turkey (I used Foster Farms)
    - 2 slices Whole grain bread, crumbled into pea sized pieces (I used Kirkland's Multigrain 100% Whole Grain Bread)
    - 4 large eggs
    - 2 TBSP chopped basil
    - 4 TBSP finely minced garlic
    - 1 cup finely minced onion
    - 1 cup ketchup (I used regular Heinz)
    - 4 TBSP balsamic vinegar
    - nonstick cooking spray

Tips

I have a large family, so this recipe makes two loaves. You could easily use egg substitutes (approx. 1 cup) and lower carb ketchup. I just made this with what I had on hand.


Directions

Preheat oven to 375 degrees Fahrenheit. Spray sides and bottoms of two loaf pans with nonstick cooking spray.
In medium bowl, mix crumbled bread and eggs together until well blended. Add basil, garlic, and onion and mix well. Mix in 1/2 cup of ketchup (reserve other half). Finally, mix in ground turkey until all is well blended. Split mixture in half and press into the two loaf pans, leaving about 1.5 - 2 inches of space at top to accommodate grease/water that will rise during baking. Bake for 25 minutes. While loaves are baking, whisk together remaining ketchup and balsamic vinegar. After the first 25 minutes of baking, drain any grease/water that has accumulated on top of loaves. Spread ketchup & balsamic mixture over top of two loaves then return to oven for additional 20 minutes or until internal temperature reaches 165 degrees Fahrenheit. Remove from overn and let loaves sit for 10 minutes before serving. Slice into 12 even slices.
