Organic Sourdough Pizza Crust Recipe

Introduction

Sourdough is one of those tried and true recipes that have been around for ever. One small fact that I learned in my search for great sour dough is that IF you are bothered by white flour... which I am... the chemical reaction of creating sour dough develops and enzyme which destroys the nasty stuff that creates all that pain in my joints. I thought this was a bit strange, but it is so true! I never have a reaction when eating sourdough bread, pizza crust... anything sourdough based. I do not have celiac disease, that is another story all together, I just have an allergy to white flour! Sourdough is one of those tried and true recipes that have been around for ever. Ingredients

    *sourdough starter, 1 cup
    *Water, filtered, 1 cup (8 fl oz) (remove)
    Olive Oil, 1 tbsp (remove)
    *Wheat flour, white, bread, enriched, 3 cup (remove)
    Salt, 0.5 tsp (remove)

Directions

In a medium bowl add 1 cup sourdough starter (it does not need to be active), 1 cup water, 1 tbsp olive oil and 1 tsp unrefined sea salt. Mix well. Now add 3 cups of organic spelt flour and stir until dough forms. Turn dough out onto a floured surface and knead dough for 10 minutes. You might need to add some more flour as you go if it is to sticky. Place into a bowl and cover bowl with plastic wrap and let sit in a warm place for 8 hours.

Preheat oven to 400 F. Press the dough out with your fingers onto a pizza pan or stone. This make 1 very large pizza or 2 medium size ones. Prick lightly with a fork. Bake for 10 minutes.

Remove pizza crust from oven and add your sauce and toppings. Place back into oven and bake for an additional 12-15 minutes.
