Quinoa with Vegetables

Introduction

Quinoa steamed with frozen and fresh vegetables: onions, green bell peppers, peas and corn Quinoa steamed with frozen and fresh vegetables: onions, green bell peppers, peas and corn
Number of Servings: 8

Ingredients

    1 cup dry Quinoa
    1/8 cup Red Onion
    1/8 cup Green Bell Peppers
    1/2 cup Frozen Peas
    1/2 cup Frozen Corn
    2 cups Water

Tips

Add seasoning and/or butter as desired.


Directions

1. Spray pot with Pam
2. Over med high heat: Add chopped raw onions and heat until sweating
3. Add green peppers, peas and corn until just heated
4. Add water and quinoa: turn heat down to med low and cover with lid
5. Heat until all water is absorbed: approximately 20 minutes

Serving Size: 8 - 1/2 cup servings
