Fried Brown Rice with Chicken

Ingredients

    1 whole egg and one egg white, fresh
    Perdue Boneless Skinless Chicken Breast - Thinly Sliced 1.5 slices, cut into bite sized pieces
    Brown Rice, medium grain, 1 cup cooked
    Carrots, raw, 1 medium chopped into bite sized pieces
    Broccoli, cooked, 1 stalk, medium cut into pieces
    Soy Sauce, 2 tbsp
    Cooking Sake, 1 tbsp - can find these in Asian markets
    Ginger, ground, 1 tsp
    Garlic, 3 clove, minced

Directions

In a bowl, combine the one egg and egg white and beat thoroughly. Put aside.
In a non-stick pan, add the garlic and ginger - cook for a minute. Then add the chicken and cook until just about white. Add the broccoli and carrots and stir fry for 3-4 minutes. Add about 1/4 cup of water and cover - just to let the steam cook the vegetables and make the broccoli bright green. Takes about 3-4 min in medium heat.
Add the brown rice and stir for a minute. Add the soy sauce and sake and combine.

Put all the ingredients on one side of the pan and fry the beaten egg until cooked. Then combine all ingredients and serve.
