Pork Chop Casserole

Introduction

One dish - crockpot meal (Make ahead) One dish - crockpot meal (Make ahead)
Number of Servings: 4

Ingredients

    1 10 ounce pkg frozen mixed vegetables
    1 can diced tomatoes
    1/2 cup diced onions, juice included
    1/4 cup water
    4 pork chops, fat trimmed
    salt & pepper or Herb seasonings to taste

Directions

Makes 4 servings - 1 pork chop each serving

Put mixed vegetables in bottom of crockpot. Spread onions on top. Pour canned tomatoes over top of all. Add a 1/4 cup water. Place pork chops on top of all. Lightly sprinkle seasonings over pork chops. Cook on low for 8 hours.

This recipe can be put together the night before and put in refrigerator overnight.

Other variations
You can substitute 2 cans vegetables for frozen. Omit water and do NOT drain vegetables.

This recipe can also be baked at 350 for 1 1/2 hour.
