Ingredients

4 cloves garlic
1 cup onion
1/2 cup celery
2 tbsp oil
2 cans diced tomatoes, no-salt added
2 cups vegetable or chicken boullion
1.5 cups zucchini
1 cup yellow squash
2 cups chopped mushrooms
6 large carrots, sliced
2 cups cannelini (white) beans
1 cup quick cook barley
4 cups spinach
Directions
Sautee garlic, onion & celery in olive oil in stock pot on medium heat until tender. Add tomatoes, boullion or broth, water, zucchini, squash, carrots, mushrooms and black pepper to taste. Bring to a boil. Reduce heat, add beans. Simmer for 15 minutes. Add barley & spinach and cook for an additional 5 minutes. Makes 18 one cup servings.
