2 8-oz packages Neufchatel cheese
8 oz shredded sharp cheddar cheese
4 tbs sour cream
7 oz can diced pimentos, drained (120 g dry weight)
1/2 jalapeno pepper, seeded and diced
Use preshredded cheddar cheese, and this is easy. The sour cream is also optional, but helps make this an easy-to-spread recipe. A little salt or garlic salt might also be nice.
Half a jalapeno adds just a little kick, without making it terribly spicy. Exclude for no spice, or use a whole jalapeno for more!
Add peppers and mix until combined.
Store in the refrigerator; best left overnight for flavors to combine.
