Ingredients

    brown rice lasagne noodles
    meat sauce
    cottage cheese
    mozzarella cheese
    parmesan cheese
    oregano
    parsley
    pepper

Tips

if available, i also line cheese with spinach leaves.


Directions

start sauce- saute chopped onion and garlic in oil, add mushrooms and let soften. add meat, break up and brown. add jar of sauce with about 1/4 jar of water to get all sauce from jar. add basil. stir and simmer for at least 10 minutes. while simmering, wet noodles with hot water. lay aside. in large bowl, mix cheeses and pepper, parsley & oregano. when sauce is done, take 8x8 glass pan and put some sauce with as little meat as possible into bottom. line with 3 noodles broken to fit. spoon sauce with meat over noodles, making sure to cover all noodle. add 1/2 the cheese mixture. drip some sauce over cheese. repeat for next layer, putting noodles in other direction. cover with 3 more noodles, using leftover ends to fill in spaces. cover noodles with more sauce and sprinkle with parm cheese. cover pan with plastic wrap and cook in microwave 30 minutes. if you want melted cheese on top, add 10 minutes before done. let stand 5 minutes before cutting and serving. spoon rest of sauce over pan if desired.
